Arrowroot (Maranta arundinacea) is a white, easy to digest, gluten-free starch. This flavorless powder is produced from the dried rhizomes of the obedience plant. A large perennial herb indigenous to the West Indies, arrowroot was introduced by the English to most of their colonies in the tropics and today is grown in much of the world.
Arrowroot Powder is used primarily as a thickening agent for puddings, sauces, and gravy. It has twice the thickening capacity of flour and thickens at a lower temperature. Unlike flour and cornstach, arrowroot is not weakened by acidic ingredients and is is very smooth in its consistency.
Arrowroot does not mix well with dairy, forming a slimy mixture. Mix arrowroot with a cool water before adding to hot fluids. Sauces, puddings and gravies thickened with arrowroot should only be heated until the mixture thickens and removed immediately from the heat. Overheating tends to break down arrowroot's thickening property. Substitute two teaspoons of arrowroot for one tablespoon of cornstarch, or one teaspoon of arrowroot for one tablespoon of wheat flour.
The lack of gluten in arrowroot flour makes it increasingly useful as a replacement for wheat flour in baking. Like other pure starches, however, arrowroot is almost pure carbohydrate and devoid of protein, thus it does not equal wheat flour nutritionally.

Sodium Citrate is the sodium salt of Citric Acid. Like Citric acid, it has a sour taste. Like other salts, it also has a salty taste. It is commonly known as sour salt and is mainly used as a food additive, usually for flavor or as a preservative. It gives club soda both its salty and sour flavors. It reduces the acidity of foods, so it allows spherification with stongly acidic ingredients. Sodium Citrate is also used as an antioxidant in food as well as a sequestrant. It dissolves easily and acts instantaneously. Customers have had fantastic results using this product in their mac and cheese recipes and cheese sauces

Honeyville's Dough Conditioner is an all-purpose dough conditioner that will strengthen the gluten and starch components of your doughs to prevent over mixing and the negative effects it has on your finished product. Over mixing will cause breads to rise irregularly forming an odd shaped dense loaf. Dough conditioner can help to produce a consistent finished product that is lighter and well shaped. Dough conditioner can go a long way towards making your finished product look better, taste better, and last longer. Most commercial bakers use dough conditioners in modest amounts to improve the texture and appearance of their breads, pastries, and even pizza doughs. Use dough conditioner sparingly as a little goes a long way. Honeyville Dough Conditioner is an ideal product for long term food storage and emergency preparedness.
